Today I bring you stained glass rainbow cookies with a nutty homemade cookie dough, and soft vegan marshmallows as clouds.

🏳️‍🌈 June is Pride Month and I wanted to bring awareness with one post a week about a different topic. Today, I wanted to talk about stereotyping. I had a (bad) friend who used to complain because I wouldn't give her women's fashion advice, like her gay hairdresser did. I used to tell her that I never wear women’s clothes, therefore, I was not interested. She also used to say that I was too rough to be gay sometimes. Needless to explain why all of this is wrong, and it is sometimes the unfortunate task of some of us to educate. LGBT+ people should not be compared to your other gay friend or to that other lesbian character on a series. We all come in different shapes and styles, and it is insulting and reductive to expect that we would all act a certain way. Plus, masculine or feminine expression is not indicative of sexuality or gender identity. Please, be a good ally and don't stereotype.


STAINED GLASS RAINBOW COOKIES

Cook: 15 minutes

INGREDIENTS

3 boiled sweets of each colour: red, orange, yellow, green, blue, purple
Vegan marshmallows
1 tbsp. ground linseed + 2 tbsp. water + 1 tbsp. aniseed liquor
1/2 cup unsalted margarine
1/4 cup brown sugar
1/8 tsp. salt
1 tsp. vanilla extract
1 cup wholemeal spelt flour
1/2 cup almond flour
1/2 cup cornflour


INSTRUCTIONS

  1. Mix the linseed egg ingredients and set aside for 5 minutes. Whisk the margarine with the sugar with the salt to make a cream. Add the linseed egg, vanilla and flours, and combine. Make a rectangle and keep in the fridge for 1h.
  2. Crush the boiled sweets by colour. I used a mortar and pestle, but you can also crush them in resealable bags. The pieces need to be rather big and not powdery or they will burn.
  3. Cut the dough in two and keep one part in the fridge. With the other one, roll it out onto a floured surface (25-50mm). Make the rainbow shapes and cut out the inside part. I used bowls and measuring spoons to make the round forms. Tidy up the edges and put onto a lined baking tray. Add the boiled sweets pieces and keep in the fridge for 15 minutes. Use this time to preheat the oven at 180°C. Repeat with the other half of the dough.
  4. Bake the biscuits for 10 minutes. Take out and put the marshmallows on the bottom of the rainbow, and bake for another 2-3 minutes. You may need shorter in total, so keep an eye so that the caramel doesn't burn.
You can keep them in an airtight container for a couple of days.
