Today I bring you a cold rainbow pancake stack filled and covered with a tofu cream.

I made this to celebrate Pride month. You can use any pancake recipe, divide into six bowls and colour using food colouring. The cream works better cold but you can have it warm if you want.

🏳️‍🌈 June is Pride Month and I wanted to bring awareness with one post a week about a different topic. Today I wanted to talk about inclusive language. For example, you could say ‘people’ instead of ‘men and women’. Why using sir/madam when you could just say ‘excuse me’, ‘greetings’ or ‘hello, everyone’? Another point about the language is the heteronormative, or assuming that everybody is heterosexual by default. For instance, instead of asking a person that identifies as female if she has a boyfriend, you could ask if she's in a relationship or if they have a partner or other half. Regardless of how we identify, we can all include our pronouns on socials to normalise it  and as a way of both expressing our identity, educating allies on the subject, and furthering the conversation on inclusive language.



RAINBOW PANCAKE STACK

INGREDIENTS

Filling
349g Silken tofu
1/4 cup unsweetened soya milk
2 tbsp. crunchy peanut butter
2 tbsp. maple syrup
1 tsp. ground flaxseed

Dry ingredients
1 + 1/4 cup wholewheat flour
3 tbsp. brown sugar
1 tsp. baking powder
1/2 tsp. salt

Wet ingredients
1 + 3/4 cup unsweetened soya milk
1 tbsp. sunflower oil
1 tsp. vanilla extract

Food colouring: red, orange, yellow, green, blue and violet

INSTRUCTIONS

  1. Blend the filling ingredients the previous day and keep in the fridge overnight so that it´s very cold.
  2. Mix all the dry ingredients in a bowl before adding the wet ones and blend. Divide equally into 6 bowls and colour each with food colouring: red, orange, yellow, green, blue and violet.
  3. Put a frying pan over a medium heat and when hot, add the batter. I made 3 pancakes per colour. When the edges start getting cooked and the middle starts bubbling, flip and cook the other side. Repeat until you finish all the colours and let them cool down.
  4. Assemble by colour starting from the violet at the bottom, and alternating layers of the filling, then blue, green, yellow, orange and red. Finally, cover the top and spread towards the sides with the remaining cream with the help of a spatula.
You could keep them in the fridge for a couple of days, but they’ll be better on the day they are made.
