Today I bring you a rainbow waffle with vegan white and dark chocolate to form the Progress Pride flag.

🏳️‍🌈 June is Pride Month and I wanted to bring awareness with one post a week about a different topic. Today, I wanted to talk about the Progress Pride Flag designed in 2018 by Daniel Quasar. The rainbow flag has gone through a few versions since it was created in 1978. Also, there have been new flags created from other minorities within the LGBT+ community. What I like about the Progress Flag is that it combines all those, and, therefore, for me it's the most inclusive. The chevron represents marginalised people of colour, trans individuals, and those living with HIV/AIDS and those who have been lost. Flags are ever changing in the search of the most inclusive one, and ever since the original post in my old blog in 2021, now they have added the intersex yellow with a purple circle into the chevron to have the Intersex Inclusive Progress Pride Flag. And by the time you read this, it might have changed again!


PROGRESS RAINBOW WAFFLES

Serves: 1 person
Prep: 30 minutes
Cook: 5 minutes

INGREDIENTS

Dry ingredients
1/2 cup blitzed oats
1/4 cup wholemeal spelt flour
1/8 cup brown sugar
1/2 tsp. baking powder
1/4 tsp. cardamon powder
1/4 tsp. salt

Wet ingredients
1/4 cup + 1 tbsp. unsweetened soya milk
1 tbsp. sunflower oil
1/2 tsp. vanilla extract

Chocolate cover
2x Vegan baking white chocolate bars + 1 tsp. coconut oil
Vegan baking dark chocolate + 1 tsp. coconut oil
Food colouring: red, orange, yellow, green, blue, violet, brown and pink.


INSTRUCTIONS

  1. Mix all the dry ingredients in a bowl, add the wet ones and mix well. Divide equally into 6 bowls and colour each with food colouring: red, orange, yellow, green, blue and violet.
  2. Brush with oil the waffle maker and turn on. When hot, start pouring each colour by lines, starting at the top with the red and making your way down. Cook at maximum heat for 5 minutes or as per your waffle maker.
  3. While it cools downs, melt in a Baine Marie the dark chocolate with the coconut oil. Start forming the dark chocolate outer chevron with the help of something straight (ironic). I used a dough cutter. The chevron points at the centre of the waffle. Let it set in the fridge.
  4. In the meantime, melt in a Baine Marie the white chocolate with the coconut oil. Take a fourth of it, colour brown and pour over the waffle the second chevron slightly overlapping the dark chocolate. Let it set in the fridge. 
  5. Keep the white chocolate melted in the Baine Marie and do the same for the light blue, pink, and finally white triangle (no colouring). 
Serve immediately.
