Pinchitos morunos de soja (Moorish kebabs)

Today I bring you a summer vibe treat to blow your omnivorous guests’ minds: grilled soya chunk skewers marinated in a rich paprika spice blend. Perfect for a vegan BBQ!

This was something that my iaia used to cook from scratch and we never had enough of them.

PLANT POWER, MAKE-UP!

The original recipe is usually made with pork, but the texture of soya chunks is so close to real meat that if you don't tell, you wouldn't even know. The flavoursome spices mix is what gives the characteristic taste.


PINCHITOS MORUNOS DE SOJA (MOORISH KEBABS)

Serves: 4 people
Prep: 20 minutes
Cook: 10 minutes


INGREDIENTS

350g dried soya chunks
2 cups veggie stock
1/4 cup olive oil
1 tbsp. lemon juice
1 tbsp. smoked sweet paprika
1 tsp. ground cumin
1 tsp. dried coriander leaf
1/2 tsp. salt
1/2 tsp. garlic granules
1/4 tsp. ground black pepper
1/4 tsp. ground turmeric


INSTRUCTIONS

  1. Cook the soya chunks with the veggie stock as per pack instructions and drain the excess stock.
  2. Mix the remaining ingredients and coat well the soya chunks with it. Let marinade overnight in an airtight container in the fridge.
  3. Pan fry the chunks as they are or put them in skewers and cook on a grill or barbeque grill.

You can keep them in an airtight container for a couple of days.
