Today I bring you a rice pudding infused with cardamom and star anise, with candied lemon slices decorations.
CARDAMOM RICE PUDDING
Makes: 4-6 pots
Prep: 5 minutes
Cook: 45 minutes
INGREDIENTS
Pudding
4 cups oat milk
1 cup pudding rice
1/2 lemon peel, pith removed
1 tsp. vanilla essence
2 star anise
10 cardamom pods
A pinch of salt
1/2 - 3/4 cup demerara sugar (adjust to taste)
Suggestion to serve: cardamom powder
Candied lemon slices
1 cup caster sugar
2 cups water
1 tsp. Sicilian lemon essence
A few drops of yellow colouring
1/2 lemon, thin slices
INSTRUCTIONS
- Mix all the rice pudding ingredients, bring to a boil and simmer for 30-40 minutes, stirring frequently. Adjust sweetness to taste. Remove the lemon peel, star anise and cardamom pods. Put in pots, cool down and leave in the fridge overnight. Sprinkle cardamom powder to serve.
- For the candied lemon, mix all the ingredients and cook for 45 minutes over a medium heat. Don’t let the syrup brown. Cool down on baking paper and use to decorate the puddings.
